Sprouted Chickpea Salad
- 5 cups sprouted chickpeas
- 1 tablespoon apple cider vinegar
- 4 tablespoons raw olive oil
- 1/2 cup fresh cilantro, finely chopped
- 3/4 cup sundried tomatoes, thinly sliced
- 1 tablespoon lemon juice
- 2 cloves garlic, finely chopped
- 2 avocados, cubed
Combine all ingredients except avocado in a large salad bowl. Top with cubed pieces of avocado and serve with green salad.
