Sprouted Chickpea Salad
5 cups sprouted chickpeas
1 tablespoon apple cider vinegar
4 tablespoons raw olive oil
1/2 cup fresh cilantro, finely chopped
3/4 cup sundried tomatoes, thinly sliced
1 tablespoon lemon juice
2 cloves garlic, finely chopped
2 avocados, cubed
Combine all ingredients except avocado in a large salad bowl. Top with cubed pieces of avocado and serve with green salad.
